Cooking Instructions
Cut potatoes into quarters and boil for 10-12 mins
Generously oil a sheet pan and place boiled potatoes on pan, spread out well. Smash potatoes down with a muddler, bottom of a cup, or whatever you have! Top with more oil, salt, pepper, and paprika and bake at 425 for 20-25 mins until crispy
Dice pickles, red onions, and herbs
Mix yogurt, mayo, mustard, lemon juice, whole mustard, salt, pepper, and honey in a bowl.
Combine everything in a bowl and mix right before serving - too early and your crispy potatoes won't be so crisp :)

1/4 cup diced pickles
1/4 cup chopped dill
1/4 cup chopped parsley
1/2 cup diced red onion
2 tbsp yogurt
1 tbsp mayo
1 tbsp mustard
1 tsp whole grain mustard
1 tbsp lemon juice
1 tbsp garlic powder
small drizzle of honey
paprika, salt, and pepper to taste
