Crispy Pickle Potato Salad

We boil red potatoes, smash them flat, and roast them until they're crunchy on the outside and creamy on the inside. Toss them in a light yogurt-mustard dressing with pickles, fresh herbs, and red onion right before serving so the crispy edges stay crispy.

Cooking Instructions

  1. Cut potatoes into quarters and boil for 10-12 mins

  2. Generously oil a sheet pan and place boiled potatoes  on pan, spread out well. Smash potatoes down with a muddler, bottom of a cup, or whatever you have! Top with more oil, salt, pepper, and paprika and bake at 425 for 20-25 mins until crispy 

  3. Dice pickles, red onions, and herbs

  4. Mix yogurt, mayo, mustard, lemon juice, whole mustard, salt, pepper, and honey in a bowl.

  5. Combine everything in a bowl and mix right before serving - too early and your crispy potatoes won't be so crisp :)
